The Wine: Organic method used in grape production. Dedalo is made of 100% Ciliegiolo grapes, hand harvested at the beginning of September. The maceration takes place in stainless steel vats for about 3-4 days. After an aging period of 5 months in 20 Hl Chestnut barrels, the wine is refined in bottle for about 4 months before being released on the market.

Tasting Notes: Dedalo has a deep ruby red color. On the nose expresses a fruity bouquet with hints of unripe plum and herbal notes. Well-balanced, persistent with a pleasant aftertaste. Dedalo is best suited for pasta with light sauces and game.
