TRABOCCHETTO

GRAPES: 100% PECORINO

The Wine: “Trabocchetto” takes its name from the word “Trabocco”, which was an ancient fishing machine imported from the Middle East in the 18th century and widely used on the Adriatic Coast.  The Trabocco was a wooden platform anchored to large rocks that stretched out into the sea and was able to sustain the enormous net (called the “Trabocchetto”) which allowed fishermen to catch schools of fish in dangerous coastal waters during bad weather.  The wine is made of 100% Pecorino grapes.  The vineyards are located 1,150 feet above sea level, and the soil is rocky and calcareous.  The grapes are harvested by hand in mid-September, crushed, and then undergo a cold maceration in stainless steel.  A soft pressing follows and the clarified must is then fermented with select yeasts in temperature controlled stainless steel vats for 12 days to preserve the natural Pecorino fruit and freshness of the wine.

Tasting Notes: Trabocchetto is a brilliant straw color with a fruity bouquet and explosive flavors of ripe pear, apple, and jasmine on the palate, finishing with a gentle and refreshing acidity.  It pairs well with grilled fish, vegetable tempura, and oysters.
