VIN SANTO

GRAPES: 70% MALVASIA, 30% TREBBIANO

 

The Wine:This Vin Santo is made of only the best grapes which are 70% Malvasia and 30% Trebbiano.   After carefully selecting the perfect grapes at harvest time, the clusters are hung to dry, from the ceiling beams in well- aerated rooms, for a couple of months.  The sweet must is then pressed and fermented slowly into small oak (225l) barrels called “caratelli” for a period of 4 years. It is during this process that this Vin Santo reaches its golden yellow color and its aromatic bouquet. And finally for another six months this wine is allowed to prolong its aging process in glass demijohns and then in bottles before being released into the market.

Tasting Notes:Vin Santo is an excellent amber colored dessert wine with an intense fruity bouquet of apricot and figs. Full bodied wine with a smooth, velvety lingering finish on the palate. Well suited to cakes and pastries, particularly almond biscotti or cantuccini (well known in Tuscany) or with sharp cheeses as Gorgonzola. It can also be used as a sipping wine like Port before or after a meal. A wine to be savored alone or with good friends. 

CHIANTI COLLI SENESI

GRAPES: 90% SANGIOVESE, 10% CANAIOLO, COLORINO, MERLOT & MALVASIA NERA

 
 

The Wine:Chianti Colli Senesi is made of 90% Sangiovese and Sangiovese Grosso and 10% Canaiolo, Colorino, Merlot and Malvasia Nera grapes.  After a very short maceration period, the fermentation process begins in temperature controlled vats. Thereafter, the wine is transferred into 30hl Slovenian oak casks to age for approximately one year.  Shortly after the wine is bottled and placed in the market for consumption.

Tasting Notes:Chianti Colli Senesi is a deep ruby color with an intense bouquet of dried flowers. Full bodied, dry, well balanced. This eclectic wine is a warm and velvety Tuscan red that seems to melt in your mouth. Full-bodied, richly flavored on the palate with a long, smooth, lingering finish. A perfect match for grilled and roast meats, rich, flavorful sauces and ripe, pungent cheeses.
