NERELLO MASCALESE, NERELLO CAPPUCCIO, NOCERA, ACITANA, JACCHE’

The Wine: After the soft pressing of the grapes, the fermentation takes place in stainless steel tanks at temperature controlled for a period of about 15 days. The wine is then racked to new Troncais and Alliers barriques and aged for 12/18 months. The final blend is bottled unrefined and unfiltered to preserve its natural flavors and is released on the market 18 months later.

Tasting Notes: Palari Faro has a ruby red, with garnet hues tending towards brick color with aging. Loads of perfume with notes of jasmine, cardamom and ripe berries offers a spicy touch of vanilla scent. Flavorful and dry on the palate, velvety and striking with bittersweet tannins on the finish. An appealing noble wine with great aging potential depending on the vintage. This wine is best suited for hearty dishes such as roasted red meats, grilled white meats, game and aged cheeses.

ROSSO DEL SOPRANO

NERELLO MASCALESE, NERELLO CAPPUCCIO, NOCERA, ACITANA, JACCHE’

The Wine: After the soft pressing of the grapes, the fermentation takes place in stainless steel tanks at temperature controlled for a period of about 15 days. The wine is then divided in 2 parts, one part is racked to one year old French oak barrels (barriques) and the other 10% in stainless steel tank and allowed to settle and age for 8/12 months. The final blend is bottled unrefined and unfiltered to preserve its natural flavors and is not released in the market until 12 months later.

Tasting Notes: Palari Rosso del Soprano has an intense ruby red color. The fragrance is loaded with concentrated perfumes of typical berry and jam. A dry wine with lots of lush, spicy black fruit flavors in the mouth helps ease the tannins so that all comes together in a ripe and youthful finish. An appealing noble wine with great aging potential depending on the vintage. This wine is best suited for just about everything, from spicy pastas to grilled meat or barbecued chicken, and aged cheeses.

SANTA.NĂˆ (Single Vineyard)

CALARVISI, NERELLO MASCALESE, PETÙ I PALUMBA, “WILD” PETIT VERDOT AND OTHER UNIDENTIFIED AUTOCHTHONOUS GRAPES

The Wine: This outstanding single-vineyard wine is the result of the combination of different grapes coming from an eighty-year-old crù named “Santa.Nè”. After the soft pressing of the grapes, the fermentation takes place in small stainless steel tanks at a controlled temperature. The wine is then transferred into new Troncais and Alliers barriques where it ages for 24 months. It refines in bottle for an additional period of at least 24 months before being released on the market.

Tasting Notes: The name Santa.Nè has an uncertain origin but it definitely carries with it all the mystery and charm of a multifaceted land. A deep ruby red with purple hues and persistent notes of spices, cocoa and ripe red berries. Beautifully velvety and dry on the palate, it offers multiple sensations on a delightfully long finish. An appealing noble wine with great aging potential, Santa.Nè is the perfect choice for elaborate dishes, meat creations, game, pasta with flavorful sauces and aged cheeses.
