PICOLIT
GRAPES: 100% PICOLIT

The Wine: The grapes for this wine were carefully selected, cluster by cluster, before being placed on trellises to dry in the sun.  The partially dried grapes were then hand-pressed during Christmas week. Fermentation took place in kegs made of acacia wood grown near the vineyard, which were warmed gently for over a month to maintain the wine at a constant temperature.  The result is a wine with a flavor reminiscent of the past.  We know we can do even more with Picolit.  To do less would be unthinkable.

Tasting Notes: The Picolit wine is vigorous and strong with a brightly colored, cottony bud.  The shoots are slim and the thick, wrinkled leaf is light green in color.  The grapes are small and oval in shape.  Their tough skin is an opaque yellow in color, tending to gold on the side exposed to the sun while the sweet, succulent flesh is never abundant.  There are always two large pips.

The wine itself is a bright, clear yellow-gold in color with a full and elegant bouquet of acacia blossom.  The palate of vanilla and roses is smooth and stylish.  Please extract the cork with great care, as the glass of the bottle is extremely delicate.
