GAVI "FORNACI"

  GRAPES: 100% CORTESE DI GAVI

 

The Wine: Gavi Fornaci is made of 100% Cortese di Gavi grapes. After a soft press and maceration of selected grapes the wine-making process begins.  Fermentation, both alcoholic and malolactic is conducted under temperature controlled cellars, which might be the most significant improvement, stainless steel vats are essential and the must has shorter contact with the skins to less than a month.  The wine then ages for approximately 6 months before being placed in the market.

Tasting Notes: Gavi Fornaci is vivid straw yellow in color with greenish hues; extracts a delicate fruity bouquet with scents of pineapple, honey and green-apples, with subtle hints of vanilla and lemon grass.  A fresh crisp dry wine with almost a smooth texture gives way to harmonious good balance of acidity and gentle tannins and delivers a pleasant, flavorful lingering finish.   This Gavi is an excellent glass of wine to be enjoyed alone or served with, omelets, seafood antipasto, grilled or poached fish dishes as well as pasta with light savory sauces. 

 

 
GAVI DI GAVI "ROLONA"

   GRAPES: 100% CORTESE        

 The Wine: Gavi Rolonais made of 100% Cortese grapes which are transferred to the cellar immediately after harvest.  They undergo soft pressing to extract the very best from the fruit.  Fermentation takes place slowly, lasting approximately 20 days at a controlled temperature to maintain the typically rich aromas of the Cortese varietal.  The wine is bottled in February or March, giving minimal bottle ageing, but ensuring it reaches a certain level of maturity and balance before being released to the market.

 Tasting Notes: Gavi Rolona is pale straw yellow in color.  The nose is rich and long-lingering, offering crisp, refreshing aromas of pear and green apple, plus an intriguing hint of citrus and minerality.  This Gavi is most impressive on the palate, with a leisurely development and lively crispness on the finish that attest to its absolutely classic style.  Gavi Rolona is a superb glass of wine to be enjoyed alone or served with omelets, seafood antipasto, grilled or poached fish dishes as well as pasta with light savory sauces.
